You still need to go and unlock the actual mount in-game. Once you've played farther in the Path of Fire expansion zones when you're level 80, you'll be able to unlock the other mounts there. Once you've unlocked the Skimmer, you'll be able to use your Luminous Ray skin with it. For every Mount you need to Do a quest.

2) if you are interested in instanced pve and want to get to T4 fractals and (its more expensive without masteries but not impossible) i would adivice to pick warrior since its only class that has top tier pve build without need to have either expansion. It doesnt matter until T4 but at t4 some groups might not accept you.
Professions without Quickness feel terrible to gather on without taking Industry glyphs. Gathering should be made more independent from your choice of profession or specific combat build, but without totally diminishing the capabilities of builds that have lots of Quickness.
